Subject: Veggies That Freeze Well
Message: Hi ladies! I need some input here. I broke out the Food Saver today and froze up some broccoli, carrots and asparagus. I blanched the veggies, the dropped them in an ice bath to stop the cooking. Then, I dried them off and laid them out on a cookie sheet. Into the freezer they went for 1 1/2 hours. Then I broke them down into serving size portions and vacuume sealed them and back into the freezer they went.
Can anyone suggest any other yummy veggies and if so, how long should they be blanched before being frozen?

Message: You got me there but then again I really don't think I've ever frozen vegetables. I've frozen strawberries one but now know how to do it. I found this out after the fact. What I did but at least in the fridge in the foodsaver was corn on the cob and originally it sealed perfectly but then it got a buildup of air/gases and looked as if it was full of air and about to explode. Not a good thing. I do buy a large bag of shredded cheese since I use cheddar/mozarella alot and I do freeze that just in quart-size bags and that's fine. You can't tell the griddiness because I use it with casseroles, etc. I wouldn't freeze mushrooms because of the water content. I did foodsave a pepper but didn't put it in the freezer and it got watery inside. I was able to use it in fried potatoes even though it was a bit watery but the consistency was just not there. Tasted fine but I'm sure it would have been history in a few days.
