Subject: Pumpkin "Pie" Recipe
Message: Barbara asked me to post this "diabetic" recipe:
Fat-Free, Sugar-Free Pumpkin "Pie"
4 large servings
1/4 pie = 1/2 starch, 1 milk, 1 protein exchange
1 16-oz can pumpkin (not the pie filling!)
1 cup Egg Beaters
1 12-oz can evaporated skim milk
20 packs Splenda
1/2 teaspoon Lite Salt
1 tablespoon pumpkin pie spice
Mix all ingredients. Spray a 9 or 10-inch pie pan with Pam. Pour the pie filling into the prepared pan...NO CRUST. Bake at 375 degrees for 50-60 minutes, or until a sharp knife inserted in the pie comes out clean. Chill. Serve with a dollop of sugar-free whipped topping, if desired.
