Subject: Chicken and Rice Casserole

We made this for dinner tonight and it's really good.

1 can condensed cream of chicken soup (we used the 98% fat free and couldn't taste a thing wrong with it)
3/4 C long grain white rice
1/4 tsp onion powder
1/4 tsp pepper
1 3/4 C water
4 bonelss, skinless chicken breasts

Mix all ingredients (except chicken) in a shallow 2qt casserole dish. Mix it up well.
Place chicken breasts on top and bake in a preheated 375 oven for 45 minutes. Be sure to cover the dish.

When we took it out after 45, the chicken wasn't done and the rice hadn't absorbed all the liquid so we uncovered it and put it back for another 20 minutes. The chicken was soo good!

I feel pretty good about this since we used fat free soup, though I bet the sodium content is through the roof. Anyway... we are not into this kind of casserole usually, but it was good and will be made again! There was only the pan to clean so it's a good one in my book!

Yes, my daughter found it in a magazine. You can top it with cheese, but we didn't feel like that tonight. It was goooood, but I do know what you mean about too much chicken. Tomorrow night she wants to make another recipe she found in that same magazine... a bowtie chicken salad. After that, no chicken for the rest of the week. We had chicken corndogs last night. LOL

I think it would... even brown rice is rather bland, so it won't overpower any other of the flavors and will take on a lot of flavor from the soup, pepper and onion powder. And if you like brown rice, which I do, I would think it would be great. That is what I plan to do next time. You might have to adjust cooking a little, but I don't know. I've never cooked the brown rice, just had it in restaurants.
And don't be afraid to use fat free soup... or the 98%. It tasted fantastic!

I am home with bronchitis and all I have in the pantry is brown rice, which I do like...maybe I will try it tomorrow..however...I will be adding the cheese. I am a Rat..and you would never hear me say..I did not feel like having cheese!

Yum! Thanks for sharing this one, Moi. I'm always up for a casserole meal. This one would be a good Sunday dinner. I'm thinking it might even be fun to throw some artichoke hearts on the top with grated cheese over.

Denise, we chose not to do the cheese only because we made our own YUMMY blue cheese dressing tonight too using lowfat buttermilk, low fat mayo and low fat sourcream. Some more onion powder, garlic powder and pepper. Enough cheese for one night. Did you read AlphaChicky's thread about the colon cleanser? LOL I told her she should become a Personal Plumbing Consultant. LOL

Lynnie, this just sounds so yummy as a Sunday dinner!! And I agree with the artichoke hearts. I thought about throwing some celery in it too.
I was just thrilled to find something sooo yummy and fat free!

On one of my soup labels, it shows a very similiar recipe to this one..but you do it on top of the stove and use pasta instead of rice. Decisions...decisions...
