Subject: Experimenting with Spaghetti Sauce
Message: I don't knwo why, but I feel like sharing this.
I make my spaghetti sauce from scratch. I usually use EVOO for the fat to saute the onions and garlic, etc. Today though, I was cleaning my fridge and noticed I had 3 pieces of bacon. They will never get used so I chopped them up and cooked them instead of the EVOO. Also, I had a red onion 'on the verge' so I used that instead of the brown or white onion I usually use. AND, I used 4 whole cloves of garlic to help mask the baconny flavor. Oh, and instead of beef, I had 4 pork chops that needed to be cooked so I ground them up and used that. LOL
Anyone else have anything yummy they make after cleaning the fridge??

Message: Hi cheryl! My pool overfloweth! The drain can't keep up with the rain. The wind is blowing so hard! I just got off the phone with the police dept. A very long section of chain link fencing got blown over from a construction site and it's blocking an entire southbound lane of a fairly main road. If they don't get that up before dark, someone could hit and run off into a ditch from the construction.
Several trees have blown down as well as my bird feeder, twice. LOL The kids went and found our tortoise. He had taken shelter in the dog house and was perfectly dry. I don't knw when he might have gone in there though, because he's hibernating and even in the rain they usually don't wake up and move. Maybe he did this time though. Several years ago we lost a tortoise in a rain storm. She had tried to come out of her burrow and flipped over. By the time we had gone out to check on them, she had nearly drowned. She lived a couple days, we had taken her to our vet, but died of pneumonia. We were heartbroken as she was our very first, and the one we got the same year our first daughter was born.
I am feeling better. Still coughing like mad though. I wake up miserable, but I sit up and start moving around and I'm better. I find if I drink a sprite first thing in the AM it cuts through the muck and helps a lot.
About the spaghetti sauce... while my meat and onions, etc were cooking, I moved on to the pantry. I found 3 jars of spaghetti sauce that I had bought on sale. Since I couldn't find any plain tomato sauce, I just threw in those 3 jars. No way was I going to go to the market in this weather! So, needless to say I'm gonna have some very flavorful spaghetti sauce. LOL Turned out I made enough to make lasagna tonight and I'll freeze the rest until we want spaghetti!
I can give you a basic sauce recipe in case you want to try it out. Then you just add what you want to doctor it up!

Message: I love "pot luck" and "scrambled burgers"! Thats what we call them here. My Dad use to call my pot of goodies stewp! He said it isn't stew and it isn't soup. Worked for me! Your sauce sounds really great lass the "excessive" garlic! I prefer the bacon flavor myself! But since it is actually to be a spagetti sauce I guess that will suffice! LOL
Should I send in the Coast Guard to bring you to the real south? You would love my babies, you can bring yours too!

Message: Yes, PLEASE send the Coast Guard and tell them if they get here by 6 there will be lot's of lasagna for them! LOL
Regarding stewp. Rachel Ray makes somethign she calls stewp. It's a think soup that you don't sit and stew all day, I think. I like her show because I've learned so much from her!
I got a jar a couple years ago. It has a rubber seal the lid is attached and clamps shut when you close it. I used that recently and made up a whole bunch of my chili seasoning that I like to use. That way, when I want to make chili I am ready to go! Don't know why I passed that along, just because I guess. Oh, I know, because of the NGF jar. I am dying to find something else to use it for! LOL

Message: Moi, I always do this, and I bet your sauce will be delicious. I hate wasting food, and I think it is criminal. I have to throw out some sauce now, and it was my fault for not freezing it. Oh well, I am responsible for my mistakes!!!

Message: Moi - I'm Italian. Anything goes for sauce, doncha know! My mother always threw pork in hers in addition to the meatballs. I do sometimes too. I bet the bacon added a nice zing to it.
Wow, that is something about your tortoise ending up in the doghouse. How smart! Maybe you should reward him with a Milkbone.
