Crab Rockefeller (Taste of Home)
4 tablespoons butter divided
2 tablespoons all-purpose flour
1-1/3 cups milk
1/2 cup grated parmesean cheese
1 pkg. frozen chopped spinach, thawed and squeezed dry
1 can (6 oz.) crabmeat, drained, flaked and cartilage removed
1/2 cup dry breadcrumbs
In saucepan melt 2 tbsp of butter. Stir in flour until smooth. Gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in the cheese until smooth. Add the spinach and crab.
Transfer to a greased 1 qt. baking dish. Melt the remaining butter; toss with bread crumbs. Sprinkle over the top. Bake uncovered at 375 for 15-20 minutes or until bubbly.
I am going to double this recipe for my crowd. I've never made it myself, but I've tasted it and it's good!

Actually it does sound yummy!
I need to do something for the 15 coming here. I can't do a big dinner, I just don't have it in me and neither does my knee. I was thinking an appetizer buffet or a baked potato bar. I was going to put out a couple casseroles but I think that even that would be too much for me.
Any suggestions?

Message: Moi, How about cold cut trays and veggies with dips. Would that cut it with the bake potato bar? That doesn't sound bad at all. Just set pretty, very large silver and red decorations around and say the blessing!

Message: Yummmmmm! This is my favorite kind of eating, grazing. That dip sounds wonderful and I think my mother used to make that. I'm allergic to crab and a few other shellfish, but I can still read it and drool. Barb, have you ever done that spinach dip on the Knorr's soup mix? Everybody loves that one here.

Message: Yes, Lynnie, that is my personal favorite. And scoop out the center of a round pumpernickle to use as the bowl for the dip. Set shards of the pulled bread around the outside edge of the loaf bowl when it has been chilled down. UUUUMMMMMMM!!!!!!!
