Subject: Sweet Pataters
Message: I am thinking about trying sweet potatos this year at Thanksgiving. Never had them, other than the mushy ones you get in baby food - blech!
I would like to try them but nothing too fancy. Any ideas, recipes or tips will be muchly appreciated!

She is cook du jour--I can do certain things, but I just did not inherit the cooking gene! LOL Let me know what you want to do, and I'll be back...

Message: The recipe my whole family loves is sweet potatoes and apples. You can use the canned or cooked fresh. Don't cook them til they're too mushy tho! Anyway, cut them up and put in greased casserole dish-layer with apples, brown sugar, sprinkle of cinnamon and chopped walnuts or pecans. (mix the brown sugar, cinnamon and walnuts together and sprinkle on top of the apples) Repeat layers a couple times-til you end up with brown sugar mixture on top-dot with butter and bake in a 350 oven til heated thru-45 min. or so. This is really yummy!!!

Message: I have an awesome recipe - Sweet Potatoes Pralines - they are great. My kids hate sweet potatoes, but they "gobble, gobble" these up like there is no tomorrow. I will dig up the recipe and post it.

If you have a cast iron skillet, spray that sucker down with Butter Flavor Pam or something equivalent. Turn your oven on bake @ 250 degrees. Place your washed, hole sweet potatoes in the skillet and spray them with Pam also. Cover with foil. Slow cook them until you can poke a wooden tooth pick or fork through the potatoes with no resistance or tough spots. (Make certain to place them on the top rack of the oven so the skins don't burn.) Once they are cooked thoroughly remove them and slice them open and put a pat of butter in them. Just plain ole sweets. Kind of like eating a regular baked potato, only you don't eat the skins. Is that simple enough? My family *loves* sweet potatoes.

Message: Okay - here it is - Praline Sweet Potatoes
4 cups mashed sweet potatoes (I buy canned)
1/2 cup granulated sugar
2 teaspoons vanilla extract
4 eggs beaten
1/2 pint heavy cream
1/4 lb. butter
1 cup packed brown sugar
1/2 cup all purpose flour
1 1/4 cups chopped pecans
Preheat oven to 350 degrees.
Mix sweet potatoes, granulated sugar, vanilla extract, eggs and cream with blender/mixer until smooth. Put into 2 qt casserole.
Topping - Mix the butter, brown sugar, flour and pecans with a fork or mixer on low until the texture is "crumbly". Sprinkle over the top of the sweet potatoe mixture.
Bake for 30 minutes.

Deb, while you were in Hawaii I posted a recipe here for a Pumpkin Carrot Cake that is to die for! You might take a peek at it. I collect recipes and make scrap book pages with them. I'm collecting my grandmothers' recipes, my dads recipes, and the ones I create myself. Eventually I want to put them all into one big scrapbook, make copies and give them to my kids as Christmas gifts.
My mom didn't do much cooking. Her idea of full meal was a pound of ground beef, a can of corn and a can of tomato sauce all mixed together. She thought she had gone all out on that one! LOL Usually we ate frozen pot pies and frozen mac n cheese. My dad was a long distance truck driver and when he came home from a haul, he would be the cook. Then we ate southern food. Born and raised in Louisiana! I want to gather up all the recipes for posterity.
Those are the things that make such fond family memories!

here's Helen's Sweet Potato Pie:
3 to 4 med. sized sweet potatoes, depending on whether you use a shallow or deep pie crust
Store bought crust - We recommend Mrs. Smith's
(you can bake the potatoes in the oven to soften them up for the pie) approx. 45 minutes to soften them. Let them cool at room temperature. (You can even do this step a day ahead and refrigerate, but bring them back to room temp.
1/2 cup brown sugar - to taste (this may be too sweet for you, depending on how you like it)
1/2 cup white sugar - Same note as above, so add your sugar in 1/4 increments and taste
1 stick butter - softened at room temperature
1 tsp lemon extract
1 tsp vanilla extract
1 tsp nutmeg - you can add more, according to taste
1 tsp cinnamon - same note above
Add all ingredients to mixing bowl and mix on med. speed until smooth and "fluffy" consistency.
**Tip for pie crusts - thaw your pie crust at room temperature, bake thawed crust at 300 degrees for approx. 15 minutes BEFORE you add the sweet potato filling. This will keep the bottom of your crust from being soggy and "gummy". Then add your filling and bake at 350 degrees for approx. 30 minutes or until pie & crust is golden brown, and firm.
After that, you can serve warm with whipped cream or all by itself. DEELICIOUS!

Message: Do we have to wait for Thanksgiving? Good thing that now most of my clothes incorporate that "stretch" feature. I feel that I may need it.
The Praline Sweet Potatoes are easy and oh, so good. I normally double the recipe and we eat it with dinner and the kids fight over who is going to take home the left overs.
I LOVE, LOVE, LOVE recipes. I have them everywhere - written in the back of every cook book I own, on the fridge, in my purse (for ease of shopping), etc. My dad was a truck driver for many years, so I can relate. But with 7 brothers and sisters - we all did the cooking.
I already checked out that Pumpkin Carrot Cake recipe - Thanks!!
This year we are deep frying our turkey again. We did it last year - I cannot explain the flavor and how juicy that bird was. Oh my, I can hardly wait!!!
