Subject: Thanksgiving Recipes
Message: I would love to learn what some of your favorite recipes are. What things do you serve every year, traditions, at your Thanksgiving table?
I have a stuffing recipe. It's soooo simple and basic but it's what everyone wants. I've tried to 'doctor it up' with things, but I get bannished from the table when I do ;)
Stuffing -
The stuffing is easy to make and alot of it depends on your taste... for T-day, I go all out with real butter and stuff.
1 Stick butter (no, it's not a Paula Deen recipe. I made this one myself! )
I LARGE yellow onion, chopped as you like it... if you don't like big chunks, chop it smaller
1 Bunch celery, use only the very leafy top and center of the stalk... remove as many strings as possible and chop according to your liking.
Mushrooms - optional - chopped as you like
Poultry seasoning - in a pinch you can use sage but it's not as good.
Salt and Pepper to taste.
Milk or chicken broth to moisten.
Melt butter in large skillet. Add onion, cook about 3 minutes then add celery and mushrooms and about 1t poultry seasoning. Cook until mixture is soft and gushy. (This can be done a couple days in advance to save the work and mess of the big day - I've even frozen it for a couple months and had it be fine.)
While that is cooking, tear up about 1 to 1 1/2 loaves white bread, can be stale - doesn't matter.
After the celery, onion, mushroom mixture is done, pour it over the bread and mix well. Add milk or broth until the mixture is very moist, but not soaking wet.... it should stick together but not goooze when you squeeze it.
Stuff your bird or, if cooking in a pan, you might need to dot it with some butter or a little more milk/broth on top so it isn't dry.
I've tried using water as the liquid, but the stuffing doesn't turn out the same.

Somke two 25 pound turkeys very slowly.
Use Moi's Recipe above for my dressing.
Have each of the children bring a side dish.
Enjoy the day, and eat, drink, and be merry, and tomorrow I will consider diet!

"Turkey, with stuffing, is a must for Thanksgiving dinner. There has been a warning from food scientists about the risk of food poisoning by roasting a turkey with stuffing, since the middle of the stuffing may not reach a safe temperature quickly enough.
Cook's Illustrated has come up with a way around this problem:
Heat the stuffing in the microwave on HIGH for 6-8 minutes, stirring twice during cooking, until it reaches a temperature of 130 degrees. (If you don't have a food thermometer [get one!!] the stuffing should be too hot to handle with your bare hands.) Then stuff the turkey and place it immediately in the oven. NEVER stuff the turkey ahead of time; you are just asking for food poisoning.
Stuffing expands as it cooks, so don't PACK the stuffing into the turkey. Spoon your stuffing into the main cavity and the neck cavity, filling the cavities full but NOT packing."

Message: Oh, what excellent advice!!
I have always stuffed my bird just before cooking it and have never had a problem, but it seems that more and more it's becoming a real issue and perhaps I have been playing russian roullette with my guests, and I actually like most of them ;)
I will definitely try this method this year and I know I will feel safer.
Aren't you all glad there are smart people out there who can figure this stuff out for us?
