Subject: Dangerous Carrot Cake - Watch Those Nails!
Message: Pumpkin Carrot Cake.
Taken from 'Nestle Toll House all-time Favorite Cookie and baking Recipes.'
Read through before you start.
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon of salt
3/4 cup of milk
1 1/2 teaspoons fresh lemon juice
1 1/2 cups of granulated sugar
1 1/4 cups LIBBY'S 100% Pure Pumpkin
3 eggs
1/2 cup packed brown sugar
1/2 cup vegetable oil
1 cup(8-ounce can)crushed pineapple, drained
1 cup grated carrots(about 3 medium)
1 cup flaked coconut
1 1/4 cups chopped walnuts,
divided
Cream Cheese Frosting
(recipe follows)
Combine flour, baking soda, cinnamon and salt in small bowl. Combine milk and lemon juice in liquid measuring cup (mixture will appear curdled)
Beat granulated sugar, pumpkin, eggs, brown sugar and vegetable oil in large mixer bowl until combined. Beat in pineapple, carrots, and milk mixture until combined. Gradually beat in flour mixture. Stir in coconut and 1 cup walnuts. Pour into 2 greased 9-inch round cake pans.
BAKE in preheated 350 degree oven for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 15 minutes. Remove to racks to cool completely.
TO ASSEMBLE:
Frost between layers, top and sides with Cream Cheese Frosting. Garnish side of cake with remaining walnuts. Store in refrigerator. Makes 12 servings.
FOR CREAM CHEESE FROSTING:
Beat 1 package (8 ounces) and 1 package (3 ounces) softened cream cheese and 1/3 cup softened butter in large mixer bowl; gradually beat in 3 1/2 cups sifted powdered sugar. Beat in 2 teaspoons fresh orange juice, 1 teaspoon vanilla extract and 1 teaspoon grated orange peel until fluffy. This frosting is very sweet.
NOTE: Use extreme caution when grating carrots lest you too lose a nail ;)

Message: Wow, I've never seen a carrot cake recipe that also includes pumpkin - two yummy flavors together! This sounds fabulous and worth gaining a pound and losing a nail. Please thank your daughter for her hard work to get this posted so accurately and quickly.

Message: Moi, I can't wait to try this recipe!!!! I love carrot cake!!!! This sounds delicious with the pumpkin, but I am going to try to leave out my nails. They are finally SHAPED because all across they are the same length. It's really hard to shape a nail, when it has broken past the nail line, on one side!!!

Message: Thanks for this recipe Moi. My sis makes an awesome carrot cake, now we'll be in competition to see whose cake is better! ;o)
On a nail note, I had three tips to peel off yesterday, growing out all the acrylic damage is a bummer. But I am happy to report that my nails continue to be very moisturized, and my cuticles are great.

I still have some nails that peel but after decades of abuse, I'm not surprised. I find using the buffing cream helps with that some by smoothing out the ridges that give me such grief in the first place.
It will get better!!

Message: I plan on buying the rest of the kit, hopefully I will have that buffing cream and the buffer and file soon. I am most interested in getting Barbara's file, it seems that the nail file that I am using may be contributing to the "snags" that I am experiencing? As much as I try to gently file my nail in one direction, I am noticing that they don't really feel smooth all over at the tips. Does that make sense? I guess I may just have to deal with this until the damage is gone.

A couple of my nails look like corrigated paper, but I can see where the new growth is looking less so.
I have a couple nails, my thumbs and middles that look like waves rolling in on the coast. However, they too are looking better. It's amazing the damage we do to ourselves, isn't it??

Message: AHHHHHH! Waves rolling in.......Well they will eventually become smooth as glassy waters. And you know what they say, "STILL WATERS RUN DEEP"
At least now you know NOT to apply any topical treatment. Even if you all never use the product again, my work here is done. You will all know not to go back to the fakes!
